Plant-Based Eating: The Common Ground

March 24, 2014 // 9 Comments

Healthy eating is a concept I am experimenting with ever since I did start my first diet with 16. Turning 25 next week this makes a total of 9 years of healthy eating experience and boy, I have come a long way. Starting with the advice of fitness and diet magazines, going through various restrictive and fad diets, being vegan, pescetarian, vegetarian, flirting with low-carb and low-fat, I probably did it all. In the end I found that there are diets which no-one ever should do and approaches [...]

Orange Date Energy Boost Snack Balls

January 27, 2014 // 6 Comments

Let’s start the week with something exciting: food. The only thing which lightens my Monday up, is that I can bring my snack to University while pressing a few thesis pages out of my not-ready-to-let-the-weekend-go brain. Though, I am whining here, I actually enjoy the new rhythm I am following for the finish of my thesis – only one more month to go, please excuse my excited yet slightly terrified squeaking. Back to what keeps me sane these days: snacking, and running, and snacking [...]

What I Ate Wednesday {winter spinach pomegranate salad}

December 11, 2013 // 10 Comments

Happy Wednesday foodies! Even though my posting schedule is pretty off at the moment and I am prioritizing getting ready for my semester abroad and moving out of my flat, I just couldn’t skip my favorite blog day of the week. Can you imagine that I haven’t any Christmas presents bought yet? I mean – Jays was ordered about a week ago, but the company made a mistake and now I have to call them and hope they could fix it, which I’ve been successfully postponing the last few [...]

Advent Link Up Two {no bake persimmon snowballs}

December 8, 2013 // 15 Comments

Happy second advent fellow hobby bakers!  Not much happening on With An Open Mind this week. Can you believe that I move out of my flat in less than three weeks and move to France in four weeks already? Time is flying by and the list of stuff to take care off is getting longer and longer – at least it seems so to me. One way I destress is running and yoga. Running because the fresh cold air blows all burdens from my mind and yoga to release the muscle tensions. Another way is [...]

Energy Seed Cookies {vegan, paleo and gluten free}

October 29, 2013 // 6 Comments

Today’s recipe is actually a healthy adaption of a childhood favorite of mine. Those seemingly healthy seed and raisin cookies I used to devour by the pack full, since they couldn’t be bad for you. But if you cast a glance at the list of ingredients you might be up for a nasty surprise: sugar and glucose syrup on second and third place. So instead of following the urge and purchasing a bag of this high sugar treat I thought about what ingredients my favorite cookie should consist of [...]

Banookies {healthy yet delicious chocolate chip cookies}

September 27, 2013 // 12 Comments

Happy first day of the weekend! After my decision to go on a spontaneous short trip, I packed my bags in half an hour and hit the road yesterday afternoon. Luckily it’s just a 3 hour drive, thus I arrived at my aunt’s by dinner time and had a good night of sleep. It is unbelievable how much better I sleep in total silence. My own bedroom window is opening towards a highly frequented road and even at 3 am at night I still hear some cars passing by. Rested and relaxed I am ready to [...]

Marvelous Weekend {photography workshop and cupcakes}

September 23, 2013 // 12 Comments

Happy Monday! Was your weekend as marvelous as mine? Let’s just forget about the Sick-Sunday-Afternoon part. Seems like I do really have an alcohol intolerance. Going to let it check by my doctor soon and then I’ll tell you more about it. Thus far: it’s not pretty and makes three glasses of red wine no fun whatsoever. Other than that I spend my Friday evening and most of Saturday baking up a storm of cupcakes for my brothers birthday party. Since my mom isn’t a big [...]
