Do you know these days when you just cannot decide what to have for breakfast? I have this a lot. Not because I do not know what to eat but more I do not know what NOT to eat. I mean, you have to admit it, breakfast is just the best meal of the day. No matter whether you have sandwiches (which is easy, since you can go for savory toppings and sweet ones) or a giant bowl of cereal with fruit or oatmeal or eggs – sounds all like heaven to me, especially after a good morning workout session when I am storming my kitchen the hungry-lion-way. It was one of those mornings when I came up with the idea to simply combine two of my morning cravings: a warm, sweet bowl of oats and an egg.
If you think about it – it is not so crazy at all. You have eggs in all kind of sweet dishes: french toast, egg tarts, Kaiserschmarrn. No reason to shy away from making a heavenly fluffy bowl of eggy oats. And guess what, after experimenting with a few combinations, here I am ready to share with you the best one and my favorite breakfast recipe of the month:
Heavenly Fluffy Oatmeal
ingredients for 1 bowl
- 1/3 cup rolled oats
- 1/2 cup milk of choice
- a few drops of vanilla extract
- 1/2 banana
- 1 egg
- 1 tsp brown sugar
- topping of your choice (recommended: chocolate spread, peanut butter or coconut flakes)
First you cook the oats with milk, vanilla extract and as much water as you need to make them smooth and creamy. This should take about 5 minutes. Then you cut up the banana in small chunks and fold it under the still hot oats. Whip up the egg in a cup until yolk and egg white are perfectly incorporated. Add it into the hot oatmeal and stir with a fork – still stirring bring the oats to boil again (you also might want to add a little more water here), add the sugar and froth them up with the fork again. Transfer this fluffy decadence into your favorite bowl and top it of with whatever your heart desires.
In the pictured case I used the homemade healthy Nutella after this recipe.
